[Build-common-hackers] Bug#683819: cdbs: gnome.mk: Use xz compression by default

I prepared a patch to switch gnome.mk to use xz compression by default,
see [1].  I tried rebuilding gnome-keyring with it and the binary
packages included data.tar.xz as expected.

Please consider applying it for wheezy.
