I do like this idea, and if pbuilder already implements it then doing
the same will make it easy to use for people already familiar with
pbuilder.

I do prefer the latter idea to implement all dpkg-buildpackage options in
sbuild (since you can consider sbuild to be a fancy chroot-using and
build-dep installing wrapper around dpkg-buildpackage), and then pass
through all the options to sbuild.  We could at the same time allow them
to be put in the configuration file to default them.  This would mean
breaking backward-compatibility with some options, but I'm not adverse
to this if it improves usability.  Users would always be able to use the
long --verbose option if they needed it.
