Well, lilypond 2.8 has just reached the repositories today!
Now, at least, the behaviour is consistent on both architectures (i386 and
amd64): Hebrew letters are displayed correctly. Unfortunately, it is not
over yet: "space" characters seem to be removed (i.e. all words, written in
Hebrew, are concatenated). Any idea of what could cause this (I use "gedit"
to edit the Hebrew).

I'll try to raise the issue again on the LilyPond ML but in the meantime,
version 2.10 has been out, and I'm afraid they will suggest that I upgrade
first...  [Judging from the delay for bringing 2.8 into Debian, I'm not too
confident that the package will be available any time soon :-/.]
