Let's try to make it clearer: Evolution shows GNOME version, and not its
own on its command-line help output.

Like this:
$ evolution --help|grep version
  --version                              2.12.0.1

While, of course, the --version option is OK:
$ evolution --version
Gnome evolution-2.4 2.4.2.1

I think this should be forwarded upstream.
