[Evolution] export email

How do I export email files from evolution? I am running 2.6 on Debian
etch. I have a new computer and no way to retain the emails or export to
outlook.

I've searched for the evolution files but can't find any! I would have
assumed simple text files kept somewhere. This seems to be even more
convoluted than microsoft.
