I changed the configuration to IMAP over SSL (temporarily eliminating the ssh
connection) and the result was the same, i.e., the idle option didn't hold the
connection open but it kept polling at the interval specified in the daemon
option.
I realize it could after all be at the remote end; I could turn verbose output
on if that would help.
