I've started packaging flightgear 2.12. Note, however, that simgear
yields new packages (i.e. libsimgear2.12 vs libsimgear2.10.0), so it
needs sponsoring, again.

Do you still want to upload flightgear-data-2.10.0-3 to unstable? I
could then (hopefully) take care of the 2.12.0 data upload after it
propagated to testing. (And keep 2.12 in experimental until that point).

Or do you prefer to focus on 2.12.0 right away?
