That would be rather

 apt-get install firebird3.0-server

since 3.0 uses one server binary whose behaviour is controlled via 
configuration.

Bear in mind that
 * the currently available packaged version is really old, from May 
   last year.
 * you need to add experimental to /etc/apt/sources.list
