I spent some time trying to reproduce the problem in a chroot:
I've created a bare minimal sarge chroot, dist-upgraded to etch
and tried some combinations of apt-get/dpkg in order to 
install/remove ttf-dejavu and fontconfig but with no success.

As suggested on IRC, the problem apparently arises when dealing with 
a large number of packages; 
I've reproduced the problem running the following in the etch chroot

 apt-get install xorg gnome

note that installing xorg alone or gnome alone does not trigger the problem.
