What do you mean... the whole result of the Debian system ? ... it's in
the chroot/destination... for example where you asked it to install (for
me in /media/card) and available for scp.

For the logs, my advice would be to install with something like : 
./install.sh 2>&1 | tee -a install.log

But there are many logs in the desdir's /var/log/

Am I missing something ?
