Are you sure?  On the FreeSmartphone.Org Milestone5 image [1], the
following is enough to have a nice 'gThumb' icon on the "desktop":

Stopping XServer
root at om-gta02:~# grep gthumb /etc/xdg/menus/applications.menu
root at om-gta02:~# mv gthumb.desktop /usr/share/applications/
root at om-gta02:~# /etc/init.d/xserver-nodm start
Starting Xserver
root at om-gta02:~#

Some notes:

- gthumb.desktop comes from my Debian sid

- clicking on the icon opens the "Application run error" window since
  there is no gthumb executable
