I like your suggestion. So install.sh ends and lists options for
furhter configurations, which would be implemented as tasksel scripts.
This is just fine (with me).

The question now is about how to decide over what tasks to go for. From my perception, we
should start with what would render the phone "complete" for a regular users' perspective.
On my end this is:

 * web browser
 * wifi
 * gps logging / geocaching
 * navigation
 * address book
 * phone (almost forgotten)
 * games
