Indeed I haven't had a need for wifi, bluetooth or gsm-gprs yet.
Zavai is maintained on a "if you need it, send a patch" basis, but I'm
happy to help people to create patches.
Implementing it shouldn't be hard: the best way I can think is add for
each of them a "Service" (copypasting the GPS class from gps.vala) and
then add toggle buttons for them like at the end of app_gps.vala:
menu_gps.add_service_toggle("gps.gpx", "Start GPX trace", "Stop GPX trace");
