When you get asked how you want to partition select 'manually edit
partition tables'.
Then set up a partition and set it to mount /boot. Make sure it is just
ext3 or similar.
Then you create a partition for each of the encrypted partitions you
want. Set their type to 'physical volume for encrpytion' and select the
loop-aes method. When you have done this and you will see a new entry
created for each encrypted partition in the main menu. Each will be
noted as unused space. Select each of these partitions in turn and
select a filesystem for them, and choose a mount point for them.
Also you want to add some swap, probably encrypted.
Sorry, that I can't be more precise, but it is difficult to explain how
to set it up by email.
