Well, you know, the good thing about standards is that there are so
many of them ;)

Seriously, the situation is a bit of a mess right now, but hopefully
it will clear up in the near future. What you should know about are
the standards and tools on freedesktop.org, I think that they are what
will become the future standard (and to some extent, already is). You
could also look at the mime-support package, namely the manpages for
mailcap and run-mailcap.
