I believe there are people preparing scientific papers in the old way:
latex
bibtex
latex
latex
dvi2ps
ps2pdf

I guess this is for a couple of reasons, which would include:
- Old tutorials that are still around
- Makefiles that created once and never been updated since

I'm not sure if anyone is using dvipost though
