Most packages declare their dependency on 'apache | httpd', which
means "Any web server (but Apache is the first on the list)". Why?
Because that's what the maintainers have tested it against.

This is WRONG. Apt _cannot_ guess which http server to install and needs
a default with a non-virtual package to be able to install if no real
package providing httpd is specified in the command line. So this is not
only a matter of taste, and noone is forced to use the default.
