This is an interesting initiative.

Looking at our wiki page, the most obvious project that we can propose
is to package a few Octave Forge extensions (targeting the most
active/recent ones). It's a quite easy task given our existing
infrastructure, maybe too easy, I don't know. But this can be a good
entry point for someone who is interested in contributing to the Debian
and Octave communities.
