Just to add a few more remarks:

Of course we could theoretically provide backports for all octave-*
packages. But this is a lot of extra work, and I am personally not
willing to do it.

In my view, if someone wants the latest octave and the latest octave-*
add-ons, all through APT, then she still has the option to go for
Debian testing or unstable (of course this comes at an extra cost: 
less stability of the whole system).
