One straightforward method for both getting the sources and building the
package in one shot is using dget:

dget -u --build http://mentors.debian.net/debian/pool/main/s/symfony1.4/symfony1.4_1.4.1-1.dsc

If you have set up the git repository for symfony1.4 you could also use git-buildpackage, [1] explains how.
