  deb http://people.debian.org/~zack unstable vim

you can find an unreleased version of vim which should fix the problem.
Mainly it implement the check you proposed in the preinst of both
vim-doc and vim-common, the two packages shipping files in
/usr/share/doc/vim-common. Could you please try it and report if it
properly remove the symlinks?
