there are no packages in experimental

actually, most packages are in Debian/testing with the same version as is in
Debina/unstable, so you may try the trick I proposed with Debian/testing
(the only exception is plone3)

before you do that, you should start 'script' so all you do is documented;
moreover, if you use aptitude instead of apt-get, you can always look
into /var/log/aptitude , that documents all actions (including previous
and new version of each upgrade).

 All this said, if your host misbehaves afterward, I must say that
unfortunately AFAIK there is no easy way to backup from that kind of
operation: no 'aptitude downgrade', no 'aptitude
fix-my-mess-bring-me-back-to-standard-install' (altough there was once
some script posted somewhere, at the time when people were playing
with the new pinning features).
