Thanks for the info. Seems that I made two mistakes:
- the wrong chroot type (plain, works with directory)
- wrong script name

Now the schroot works as it should.. Sorry for the noise!

The only thing that isn't completely clear to me is what the different chroot 
types mean. I used to use plain, with a hack in the scripts so it would bind the 
different directories I needed... while directory does that out of the box.
