I tried again and I think that I now know what the problem is.

I could push a quick fix to unstable but this piece of code will be completely
rewritten by a future release of sbuild which is currently in experimental.

Would you mind trying if the version in experimental solves your problem? It
does for me.

My upload to experimental was accepted 1h ago and already finished building so
should hit mirrors soon.

Otherwise I'd temporarily add a patch to the Debian package in unstable.
