Check out apt-pinning, it will do this, but since it will probably
upgrade glibc and libstdc++ and other basic packages it's the same as
moving to unstable.

It was backported for sarge on i386 (but not amd64) and the source for
that is deb http://www.backports.org/pending/openoffice.org ./
