In gnome, it's Desktop/PReferences/Keyboard/Layout options then you
assign 'compose' behaviour to some key.

Else, you can do it with xmodmap, or maybe KDE has it in the keyboard
preferences as well.

The catch is assigning 'Compose' to some key like the Windows keys or
the Menu key.  Then you do Compose+' and then e and you get é.

Else, you can assign ' to be a "dead '", but I don't find that
conveniente with all the ' I type in code everyday.
