Michał, I'm trying the latest WINE/pulse on one of my installs and it performs fairly well with the few games I play.
If you ever try pulseaudio again, you need to do this to get ALSA apps like Flash to use pulseaudio: http://ubuntuforums.org/showthread.php?t=1455816

If you still want to run without PA, then you may be interested in the
gnome packages in this PPA (they are built to use gstreamer and not PA):

I changed the default PulseAudio backend in Lucid to ALSA. Wine works, most games (like Supertux2) works; however, in OpenArena I have no sound.
