Try setting alsaspdifsink as the default for musicaudiosink:
gconftool -t string -s /system/gstreamer/0.10/default/musicaudiosink alsaspdifsink
(Or use gstreamer-properties or gnome-sound-properties)
At least that's what I think you need to do for digital output? (I'm
sure the GStreamer maintainers can give you a better answer)
