We did a lot of work into fixing this. Please see:
http://bugs.debian.org/cgi-bin/bugreport.cgi?bug=498616

You need to add your Volume Group to /etc/default/open-iscsi
for it to be automatically mounted.

If it still doesn't work, please provide the boot.log (after enabling
logging in bootlogd) file.
