Or we use dpkg-divert. We place a shell script with

[ -x /usr/bin/jed.diverted ] && exec /usr/bin/jed.diverted

unset DISPLAY
exec /usr/bin/xjed

instead of jed in /usr/bin. But maybe the alternatives way is better.
