We are short of manpower, so the answer is probably: No. I don't think
that just compiling in a stable chroot will work, as libraries have been
renamed, some stuff is only in unstable, ...

I think you are better off creating an unstable chroot and running the
latest Octave package there. Gives you the latest and greatest. 

Downside: you must have root rights on the computer in question.
