I've worked around the issue, FWIW (see [1]).

So pbuilder is now happy, and indeed builds as expected, unpacking first
the .orig (made in advance with uscan), then the .debian tarballs as
generated by gbp from the Git master branch :-)

Still, the build fails later, but that's another story (will report in a
different mail, if the problem isn't mine).

Progress... slow, but still progress ;-)

I'll also check again defaults git-pbuilder/cowbuilder, as it is quite
faster I think.
