Well, I am happy with Rodent/xfce4-icon-theme, why should I search
another? ;)
After having a look at other themes packages, it seems it would be
better to use just "mail", "email" or "mail-new" here.
A different sollution would be shipping a link from internet-mail to
xfce-mail in Rodent, and not touching Thunar's .desktop file.

Uhm, true. But at least the xfprint one could be added to the xfprint
package :)
Dunno what would be the best for the others (maybe a general place for
sendto .desktop files where all File Managers look at).
