The Maintainer and Changed-By fields are set with the -m and -e
options to dpkg-buildpackage, which get passed to dpkg-genchanges.

sbuild allows the maintainer name and uploader name to be set in
its configuration file (sbuild.conf or .sbuildrc).  If these are
set, you'll get the corresponding Maintainer or Changed-By field
set in the .changes.  In the unstable version of sbuild, none of
these are set by default, and this looks to be the case in the
squeeze version as well.  I would suggest checking if these are
set in your .sbuildrc; if set, commenting them out should be all
that is required.
